Job description:
Responsibilities:
- Cut, trim, and package meat products according to customer specifications
- Ensure proper food handling and sanitation procedures are followed
- Maintain a clean and organized work area. Clean & sanitize work station, tools and equipment daily at the end of shift. Saturday close will encompass a comprehensive cleaning of the entire back of house preparation area.
- Provide excellent customer service by assisting customers with their meat selection and answering any questions they may have
- Collaborate with the culinary team to develop new meat products and recipes
- Adhere to food safety regulations and guidelines
- Monitor inventory levels and communicate any shortages or discrepancies
- Responsibly & safely use a commercial grade meat grinder / sausage machine.
- Responsibly & safely use a commercial grade band saw.
- On a daily basis, your production quota will be:
a) Sectioning 6-12 Whole Beef Chucks & Clods into:
. 10% 3 lb. Chuck Roasts.
. 12% Chuck Steaks.
. 10% Stew meat
. 3% Cube Steak
. <1% Short Rib
. 2.2& Beef Bone
. 13% Boneless Steak
. 12 % Petite Steak
. 21% Ground Meat
b) Producing 200+ lbs of sausage according to custom blend recipes. Will include Pork, Turkey and Beef.
. Preparing, Packaging & preserving such sausage according to established protocol & procedure.
c) Anticipating & responding to sales trends and customer demand by building up an advance inventory of :
. Ground Meat - 100-160 lbs. per day.
. Ground Turkey - 100 - 160 lbs. per day
. Cut Short Ribs -
d) Inventory maintenance, to include:
. Monitoring inventory levels and responding to market demand, with planning for predictable fluctuations.
. Daily ordering in a manner appropriate to conditions & market demand as they reveal themselves.
e) Back of House management.
. Please be prepared to supervise a staff of 4+ individuals present to support both your operation and the front house counter.
. You are expected to demonstrate mastery over the responsibilities of Meat Cutter 2, and be willing to step in to cover production as needed.
Experience:
- Previous experience as a meat cutter or in a similar role within the food industry
- Knowledge of different cuts of meat and their uses in various recipes
- Familiarity with food safety practices and regulations
- Strong knife skills and the ability to handle sharp objects safely
- Excellent attention to detail and the ability to work efficiently in a fast-paced environment
- Strong customer service skills and the ability to communicate effectively with customers and team members
